Lois Freedman is Owner of the Hudson Valley restaurants with Chef Gianni Scappin: Cucina in Woodstock, and Market St in Rhinebeck.
Upon graduating The French Culinary Institute in New York City in 1986, Lois was hired by acclaimed French Chef Jean-Georges Vongerichten and worked her way up from commis (station chef) to the Poissonier (fish cook) at Lafayette Restaurant in the Drake Swissôtel in New York City.
Lois worked side by side with Jean-Georges at Lafayette, which garnered four stars from the New York Times, introducing culinary aficionados to his innovative take on classic French cuisine. Five years later, she became managing partner in his next venture, Jojos, named Best New Restaurant of the Year, earning three stars from the New York Times.
Over the following decades, Lois has been instrumental in molding the Jean-George brand into an award-winning restaurant group. Currently serving as President of Jean-Georges Management, she has been responsible for the overall concepts, service and creative decisions for the Mercer Kitchen, 66, Matsugen, V Steakhouse, Spice Market, Perry St., ABC Kitchen, ABC Cocina, Dune in the Bahamas, and Jean-Georges’ latest venture in Pound Ridge, NY, The Inn at Pound Ridge.
In 2001, Lois became a part-time resident of the Hudson Valley. Seeing a need for a new Italian concept restaurant there, she partnered with Chef Gianni Scappin and opened Cucina in Woodstock, NY, in 2006. Immediately met with rave reviews, Cucina is a mainstay in the region. She and Scappin built upon this success by opening Market St in Rhinebeck in 2012.
